High Pressure Processing (HPP), also known as high-pressure sterilization or cold pasteurization, works by applying 400–600 MPa of hydrostatic pressure to food in a low-temperature environment of 5°C–20°C, using water as the medium, achieving efficient sterilization while preserving freshness.
5 Steps to High-Pressure Processing:
1. Pressure Generation: High pressure is generated by an intensifier pump, typically operating in the range of 400–600 MPa (approximately 4000–6000 bar / 58,000–87,000 psi).
2. Pressure Transmission: Pressure is transmitted to the product through a medium, usually water.
3. Preparation Stage: The product is sealed in packaging and placed into the high-pressure vessel.
4. Pressure Application: The pump raises the pressure inside the vessel, applying and holding pressure on the product for a specified time.
5. Pressure Release: After processing, pressure is released in a controlled manner, completing the cycle.
